Picked today. They need to be soaked, water changed daily for 12 -15 days to get the
bitterness out. Then they are pickled in a little salt with thyme, wild fennel, lot of bay leaves and kept for 2 or months before trying. More salt and they will keep better,
but need washing in clean water before they become edible.
